Boxing Day Fun

We had a great day with some deep plastic fishing early along with some flats sight casting and some good fun with Spotty mackerel,Mac Tuna and Long Tail Tuna.





Al got to sight cast his first Golden Trevally that was swimming with a large shark on the flats only to have the Golden swim back to the shark after hookup and fray his leader as it swam over it's back then underneath it[smart fish] then they both swam off together with both of us standing there in disbelief in what we had just seen.

He sight cast landed and released this big Shovel nose on a 5 inch Snap Back that gave him a good battle in the shallow water.






We kept 2 Spotties for a meal that night, this is Al's recipe for his creation called Hawaiian Mackerel,it's really easy to prepare with minimal mess and tastes great.
I'm not a big fan of eating Mackerel but this was very nice indeed with a fresh side salad.

Firstly lay down a piece of Al foil then place a piece of baking paper on top of it[this stops the fish sticking to the Al foil].
Then butter paper and lay Mackerel fillet on the butter place thinly sliced Mango or Pinapple on top of the Mackerel.





Add a small splash of Chardonay over the top and sprinkle with salt and pepper.

Fold baking paper into a parcel then the al foil to seal the parcel then cook on Bar-Beque for about 3-4 minutes per side,then serve with Salad.
